Lentil Surprise – a WFPB-NO recipe
I have tweaked this WFPB-NO recipe to make it easier & more time efficient.
I made it with green lentils, mushrooms and cilantro and found it to be DELICIOUS 🙂
While I would keep the lentils, carrot & onion, you can add almost any vegetables (or flavoirings) to this recipe.
Ingredients
- 4 cups (1 L) vegetable broth
- 2 cups (500 cc) tomato sauce
- 2 cups red lentils OR French green lentils
- 1 onion chopped
- 1 bell pepper chopped
- ½ tsp garlic, minced
- 1 carrot, grated
- 2 tbsp parsley flakes
- 1 bay leaf
- ½ tsp basil
- ¼ tsp smoked paprika
- Simmer lentils in veggie broth & tomato sauce
- Add chopped onion & grated carrot.
- While this is simmering add spices and the other chopped vegetables (hard ones first since they need to cook longer)
- Ready in about 30 minutes
- If desired at the end you can add any of the following:
- Sliced tempeh or tofu
- Spinach
- Cilantro.
Suggest serving over boiled sweet potatoes, rice, or potatoes.
