Overnight Oats Recipe
Recently we’ve switched from our regular cooked oats to an overnight recipe. We find it tastier, and it seems to sit in one’s stomach for longer (i.e. you don’t get hungry before lunch).
All you need is a 500 cc Mason jar (or another jar like one used for peanut butter)
I place 2/3 cup organic steel cut (or regular oats) plus a handful of goji berries and also some organic salad topper into the jar.
Then I fill it up to about 1 cm from the top with frozen blueberries.
I then add 1 cup of a plant-based milk (I currently use 2/3 cup of soy milk plus 1/3 cup water).
Next, give it a good shake and place in refrigerator overnight.
In the morning I put it in a bowl with 2 Tbsp of ground flaxseed and sprinkle on some cinnamon and ground cloves plus 1 Tbsp maple syrup. Voila !
