Plant-based Ground Beef
Here is a great place to start your transition to a WFPB (Whole Food Plant-Based) diet – a simple ground beef alternative made of only three ingredients – cauliflower, mushrooms, and walnuts.

Here is a simple Bolognese recipe using the result:
- In a food processor, chop / combine the following:
- Grated carrots ~ 1 cup
- Onion – 1 medium
- Garlic – 3 cloves
- Chop into small pieces (almost any vegetable works . . .):
- Red pepper – 1
- Green beans – 1 cup
- Kale or other leafy green stems (optional) ½ cup
Instructions
It is suggested to do this in 2 stages: Making ground beef (as per the video above) & using it in a recipe.
- Put items (1) and (2) in a large stainless steel pan
- Add 1 cup steamed mushrooms (optional)
- Add approximately 2 cups pasta sauce
- Allow to simmer until cooked; adding water as necessary
- When cooked al dente, add dehydrated ‘ground beef’
- At the end, add spices:
- Chopped fresh basil
- Oregano
- Optional – thyme, rosemary.
