Sweet potatoes
Scrub with a brush to clean (peeling optional) & grate

Red onion
Chopped. I use organic.

Instructions
Fry onion lightly in 1 Tbsp coconut oil (add water as required)
Add sweet potato. Stir from time to time until sweet potato is lightly cooked. Add water as required.
Add chopped cilantro, curry powder, chill powder & stir from time to time.
Just before done you can add chopped garlic & ginger
Simmer until done
