This is a very easy dish that you can use at breakfast or as a side dish for any meal. It is also very flexible in terms of ingredients.

Ingredients
- 4 units Sweet potatoes Scrub with a brush to clean (peeling optional) & grate
- 2 units Red onion Chopped. I use organic.
- 1 tsp Curry powder I use organic
- 1/4 tsp Chilli powder Optional
- 1 bunch Cilantro Chopped. I use organic
- 2 cloves garlic Chopped. Optional
- 1 inch Ginger Chopped, Optional

Instructions
- Fry onion lightly in 1 Tbsp coconut oil (add water as required)
- Add sweet potato. Stir from time to time until sweet potato is lightly cooked. Add water as required.
- Add chopped cilantro, curry powder, chill powder & stir from time to time.
- Just before done you can add chopped garlic & ginger
- Simmer until done
