Not hash browns by Subhas Ganguli

This is a very easy dish that you can use at breakfast or as a side dish for any meal.  It is also very flexible in terms of ingredients.

Instructions
  1. Fry onion lightly in 1 Tbsp coconut oil (add water as required)
  2. Add sweet potato. Stir from time to time until sweet potato is lightly cooked. Add water as required.
  3. Add chopped cilantro, curry powder, chill powder & stir from time to time.
  4. Just before done you can add chopped garlic & ginger
  5. Simmer until done

I make a big batch of this and use it as a side dish for days.
